Ingredients

  • 1 1/2 pound calf liver, sliced & deveined
  • 2 teaspoon baking soda
  • 2 c. boiling water
  • 1 c. lowfat milk
  • 1 teaspoon garlic pwdr
  • 2 teaspoon Creole seasoning
  • 1 c. flour
  • 1/2 c. oil
  • 2 lg. onions, sliced

Method

  • Place liver in flat pan or possibly dish, sprinkle with soda, pour boiling water on liver and stir till well mixed.
  • Let stand for 1 minute.
  • Rinse liver in cool water, drain.
  • Pour lowfat milk on liver, let soak 10 to 15 min.
  • Mix flour, garlic pwdr and Creole seasoning in plate or possibly dish.
  • Drain lowfat milk from liver, roll liver in flour.
  • Brown quickly in warm oil, 2 to 3 min on each side.
  • Remove from skillet, pour most of oil out, keep sufficient to saute/fry onions.
  • When onions are clear, add in sufficient water to make gravy, add in liver.
  • Cook covered for 15 min.
  • Stir once or possibly twice if needed to keep from sticking.
  • Serve on rice or possibly mashed potatoes.
