Ingredients

  • 1 x onion, medium, minced
  • 1 x red bell pepper, minced small
  • 1 tsp garlic, chopped
  • 1 1/2 lb grnd beef
  • 1 tsp peppercorns, cracked
  • 45 ounce Chile beans, Kuner's Warm Spicey style, 3 cans
  • 24 ounce V-8 juice
  • 24 ounce beef broth
  • 2 Tbsp. Ancho Chile pwdr
  • 1 tsp grnd cumin

Method

  • Cook the grnd beef, onion, bell pepper,garlic and pepper together in a heavy skillet till the meat is colored but not browned.
  • Turn the heat to low and cover the meat with 1 1/2 c. of the beef broth and simmer for 25 min
  • Add in the beans, V-8, remaining beef broth, Chile pwdr and cumin to the meat and simmer for a long time (maybe 2 hrs).
