Ingredients

  • 1/3 c. shortening
  • 1/2 c. sugar
  • 2 eggs
  • 1 3/4 c. flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. mashed ripe bananas
  • 1/2 c. chopped walnuts

Method

  • Place
  • shortening and sugar in bowl; beat for 1 minute. Stop and scrape bowl; beat an additional minute.
  • Add eggs and beat again.
  • Mix
  • flour,
  • baking
  • powder, soda and salt into a separate bowl.
  • Add
  • dry ingredients to creamed mixture.
  • Mix on low speed for 1 minute;
  • add bananas and nuts. Mix for 30 seconds. Pour
  • mixture
  • into
  • greased and floured 9 1/2 x 5 x 3-inch loaf pan.
  • Bake at 350° for 40 to 45 minutes.
  • Remove from pan and cool on rack.
