Ingredients

  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 1/2 tsp. cinnamon
  • 1/3 c. sugar
  • 1 egg, beaten
  • 1 c. milk
  • 1/4 c. shortening
  • 1 c. mashed, ripe bananas

Method

  • Sift together flour, baking powder, salt, cinnamon and sugar in mixing bowl.
  • Add milk, egg, shortening and bananas.
  • Mix well or until dry ingredients are moistened.
  • Fill muffin tins 2/3 full, sprinkle each top with mixture of 1 tablespoon white sugar and 1/4 teaspoon cinnamon.
  • Bake 25 minutes at 400°.
  • Serve hot.
