Ingredients
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. cinnamon
- 1/3 c. sugar
- 1 egg, beaten
- 1 c. milk
- 1/4 c. shortening
- 1 c. mashed, ripe bananas
Method
- Sift together flour, baking powder, salt, cinnamon and sugar in mixing bowl.
- Add milk, egg, shortening and bananas.
- Mix well or until dry ingredients are moistened.
- Fill muffin tins 2/3 full, sprinkle each top with mixture of 1 tablespoon white sugar and 1/4 teaspoon cinnamon.
- Bake 25 minutes at 400°.
- Serve hot.
