Ingredients

  • 4 small bananas (ripe)
  • 1 tsp. fresh lemon juice
  • 1 tsp. vanilla extract
  • 1/2 c. low-fat milk
  • strawberries, kiwi fruit slices or other fresh fruit (garnish)

Method

  • Peel bananas; squeeze lemon juice over bananas. Wrap them in plastic bag and freeze until solid.
  • Chill 4 champagne glasses or bowls.
  • Cut bananas into small slices.
  • Blend in food processor with vanilla extract and milk.
  • Blend until very smooth; if mixture becomes too thick, add more milk.
  • Pour into chilled glasses or bowls.
  • Return to freezer, not longer than 2 hours. Garnish and serve with strawberries, kiwi slices or other fresh fruit.
