Ingredients
- 1/2 c. margarine, softened
- 1 c. sugar
- 2 eggs
- 5 Tbsp. milk
- 1 tsp. vanilla
- 2 large bananas, crushed
- 1/2 c. walnuts or pecans, well ground
- 2 c. flour
- 1/2 tsp. soda
- 1/2 tsp. salt
- 1 Tbsp. baking powder
Method
- Blending one at a time, combine the first 5 ingredients in large bowl.
- Combine flour, soda, salt and baking powder in separate bowl, then add to batter in large bowl.
- Thoroughly blend. Add bananas.
- (Note:
- Bananas should be very ripe!)
- Add nuts. Bake in "Pammed" loaf pan (this recipe makes a large loaf) in a preheated 325° to 350° oven for 50 to 60 minutes.
- Bread is done when top splits and appears thoroughly cooked (but not dried out). Keep covered with aluminum foil to retain freshness.
