Ingredients

  • 1/2 c. margarine, softened
  • 1 c. sugar
  • 2 eggs
  • 5 Tbsp. milk
  • 1 tsp. vanilla
  • 2 large bananas, crushed
  • 1/2 c. walnuts or pecans, well ground
  • 2 c. flour
  • 1/2 tsp. soda
  • 1/2 tsp. salt
  • 1 Tbsp. baking powder

Method

  • Blending one at a time, combine the first 5 ingredients in large bowl.
  • Combine flour, soda, salt and baking powder in separate bowl, then add to batter in large bowl.
  • Thoroughly blend. Add bananas.
  • (Note:
  • Bananas should be very ripe!)
  • Add nuts. Bake in "Pammed" loaf pan (this recipe makes a large loaf) in a preheated 325° to 350° oven for 50 to 60 minutes.
  • Bread is done when top splits and appears thoroughly cooked (but not dried out). Keep covered with aluminum foil to retain freshness.
