Ingredients

  • 3 c. flour
  • 4 tsp. baking powder
  • 1 tsp. salt
  • 1 c. chopped nutmeats
  • 1/4 c. shortening
  • 1 c. sugar
  • 2 eggs, beaten
  • 2 c. Bran cereal
  • 3 c. mashed bananas
  • 4 Tbsp. water
  • 2 tsp. vanilla

Method

  • Sift flour, baking powder, salt and baking soda together; add the chopped nutmeats.
  • Set aside.
  • Cream together the shortening and sugar until light and fluffy; add the eggs and bran.
  • Combine bananas, water and vanilla and add to the creamed mixture alternately with the dry ingredients.
  • Pour into 2 greased loaf pans and let stand for 30 minutes.
  • Bake in a preheated 350° oven for 40 to 45 minutes.
  • When done, let cool in pans for 5 minutes, then turn onto board or cake rack to cool.
