Ingredients

  • 1/3 cups Cashews, Chopped
  • 2 Tablespoons Olive Oil
  • 1 pound Green Beans, Ends Trimmed
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Freshly Ground Black Pepper
  • 1/2 whole Lemon Juice

Method

  • Toast the nuts in a small skillet over medium heat until browned on both sides. Be careful not to burn them as they burn quickly. Take off of the heat and set aside.
  • In a large pan over medium-high heat, cook green beans with olive oil until they reach your desired doneness. Sprinkle with salt and pepper.
  • Put the beans into a serving dish, and top with the lemon juice and toasted nuts!
