Ingredients

  • 2 lb. slender zucchini
  • 1/3 lb. bacon
  • 3 medium onions
  • salt and pepper
  • basil
  • catsup

Method

  • Wash zucchini; do not peel.
  • Slice fairly thin.
  • Cut bacon into 1-inch pieces.
  • Thinly slice onions and separate into rings. Cook bacon in skillet.
  • Add onions.
  • When bacon begins to sizzle, cook 5 minutes, stirring often.
  • Into a greased casserole, put a layer of zucchini.
  • Sprinkle with salt, pepper and basil.
  • Dot with catsup; cover with onions and bacon.
  • Repeat.
  • Have a layer of onions and bacon on top.
  • Dot with catsup.
  • Cover casserole and bake 45 minutes at 350°.
  • Serves 6 to 8.
