Ingredients

  • 5 tablespoons butter, divided
  • plus more for buttering baguette
  • 1/2 pound fresh mushrooms, sliced
  • 1 tablespoon flour
  • 1 teaspoon balsamic vinegar
  • 3/4 cup light cream or half and half
  • 1 1/2 pounds sweet onions (preferably vidalia)sliced 1/4 inch and separated into rings
  • 1/4 teaspoon white pepper
  • 1/2 pound swiss cheese, shredded
  • 8-10 slices baquette bread, buttered on one side

Method

  • Butter a 9x13 baking dish. Preheat oven to 350 degrees.
  • Melt 3 tablespoons butter in saucepan and add mushrooms. Sprinkle with flour. Cook over medium heat, stirring occasionally, about 8 minutes. Add vinegar. Slowly stir in cream or half and half. Cook and stir until mixture thickens slightly. Add pepper. Set aside.
  • Saute onion rings with remaining butter in a large skillet until slightly wilted, 10-12 minutes. Place in baking dish and top with grated Swiss cheese. Top with mushroom mixture. Butter bread on both sides and arrange over all. Bake 30 minutes or until bubbly and bread is nicely browned.
