Ingredients

  • 1 egg
  • 1/2 c. milk
  • 1/4 c. liquid shortening
  • 1 1/2 c. flour (unsifted)
  • 5/8 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. fresh, canned or frozen blueberries, drained

Method

  • Beat egg in bowl and stir in milk and shortening.
  • Combine dry ingredients and quickly mix with the liquid mixture until the flour is moistened.
  • Do not overmix; the batter will be lumpy. Fold in blueberries.
  • Line muffin tins with paper liners and fill each 2/3 full.
  • Bake in a preheated 400° oven for 20 to 25 minutes until golden brown.
  • Remove from oven and immediately remove from pans to cool.
