Ingredients
- 1 egg
- 1/2 c. milk
- 1/4 c. liquid shortening
- 1 1/2 c. flour (unsifted)
- 5/8 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 c. fresh, canned or frozen blueberries, drained
Method
- Beat egg in bowl and stir in milk and shortening.
- Combine dry ingredients and quickly mix with the liquid mixture until the flour is moistened.
- Do not overmix; the batter will be lumpy. Fold in blueberries.
- Line muffin tins with paper liners and fill each 2/3 full.
- Bake in a preheated 400° oven for 20 to 25 minutes until golden brown.
- Remove from oven and immediately remove from pans to cool.
