- 5 to 6 medium-sized firm, ripe tomatoes
- salt
- freshly ground black pepper
- red pepper
- 1/4 to 1/2 c. Grey Poupon Dijon mustard
- 6 Tbsp. melted margarine
- 1/2 c. Italian seasoned bread crumbs
- 1/2 c. grated Parmesan cheese
Method
- Wash tomatoes, remove stems and halve crosswise.
- Place cut side up in a lightly greased baking dish.
- Sprinkle lightly with salt, pepper and red pepper.
- Spread each with mustard.
- Mix together margarine, bread crumbs and cheese.
- Spread mixture over tomatoes.
- Bake in a 350` oven for 20 to 30 minutes.
- Yields 10 to 12 servings.
