Ingredients

  • 5 to 6 medium-sized firm, ripe tomatoes
  • salt
  • freshly ground black pepper
  • red pepper
  • 1/4 to 1/2 c. Grey Poupon Dijon mustard
  • 6 Tbsp. melted margarine
  • 1/2 c. Italian seasoned bread crumbs
  • 1/2 c. grated Parmesan cheese

Method

  • Wash tomatoes, remove stems and halve crosswise.
  • Place cut side up in a lightly greased baking dish.
  • Sprinkle lightly with salt, pepper and red pepper.
  • Spread each with mustard.
  • Mix together margarine, bread crumbs and cheese.
  • Spread mixture over tomatoes.
  • Bake in a 350` oven for 20 to 30 minutes.
  • Yields 10 to 12 servings.
