Ingredients
- 1/4 tsp. powdered tarragon
- 1/4 c. cognac or white wine
- 1/4 c. butter
- 3/4 c. breadcrumbs
- 3/4 c. fresh parsley
- 3 to 4 lb. chicken
Method
- Heat oven to 350°.
- Wash and wipe chicken dry.
- Carefully loosen skin from breast and thighs and legs.
- Stuff skin carefully.
- Tie well.
- Bake in small container, adding 1 cup chicken bouillon.
- Baste with part of butter.
