Ingredients

  • 2 Tbsp. margarine
  • 1 fresh zucchini squash
  • 1/4 tsp. pepper
  • 2 medium size onions, sliced
  • 1 tsp. salt
  • 1/4 c. water

Method

  • In a heavy skillet, melt margarine.
  • Lightly saute onion slices.
  • Wash zucchini; slice in thin rounds, leaving skin on. Add to onions and salt and pepper.
  • Fry over low heat, turning as slices brown.
  • Add water and low heat.
  • Cover tightly and steam for 20 to 25 minutes, stirring occasionally, until tender.
  • Serves 4.
