Ingredients
- 2 Tbsp. margarine
- 1 fresh zucchini squash
- 1/4 tsp. pepper
- 2 medium size onions, sliced
- 1 tsp. salt
- 1/4 c. water
Method
- In a heavy skillet, melt margarine.
- Lightly saute onion slices.
- Wash zucchini; slice in thin rounds, leaving skin on. Add to onions and salt and pepper.
- Fry over low heat, turning as slices brown.
- Add water and low heat.
- Cover tightly and steam for 20 to 25 minutes, stirring occasionally, until tender.
- Serves 4.
