Ingredients

  • 4 white fish fillets 3.5 oz
  • 2 1/2 tablespoons butter
  • 1 bunch chives halved
  • 2 1/2 lemons 1 sliced, 1 juiced, 1/2 cut into wedges, to serve
  • 2 tomatoes sliced
  • 7 ounces rice noodles soaked in boiling water for 10 mins then drained
  • 2 spring onions sliced
  • 3 teaspoons sesame oil
  • mixed greens to serve

Method

  • Preheat oven to 400°F. Line a baking tray with foil. Place each fish fillet on a piece of parchment paper large enough to enclose fish. Distribute butter over top and season. Top each with chives, 1 lemon slice and 2 tomato slices. Wrap into a parcel. Place on prepared tray and bake for 10-15 mins, until fish flakes easily with a fork.
  • Meanwhile, combine rice noodles with spring onion, lemon juice and sesame oil. Serve with fish, lemon wedges and mixed greens.
