Ingredients
- 1 c. shortening or 3/4 c. Crisco oil
- 2/3 c. molasses
- 2 tsp. baking soda
- 3/4 tsp. salt
- 1 tsp. ginger
- 3 c. flour
- 1/3 c. brown sugar
- 1 egg
Method
- Sift the dry ingredients and set aside.
- Mix the shortening with the brown sugar.
- Add the egg and mix.
- Add the dry ingredients to the liquid mixture.
- Roll into 2 (1 1/2-inch) logs. Wrap in wax paper and refrigerate 2 to 3 hours or overnight. Slice thinly, 1/4 to 1/2-inch.
- Place on a greased cookie sheet. Bake at 375° for 8 to 10 minutes.
- Store in an airtight container. To keep the cookies from getting too crisp, place a slice of bread in the container.
