Ingredients

  • 1 c. shortening or 3/4 c. Crisco oil
  • 2/3 c. molasses
  • 2 tsp. baking soda
  • 3/4 tsp. salt
  • 1 tsp. ginger
  • 3 c. flour
  • 1/3 c. brown sugar
  • 1 egg

Method

  • Sift the dry ingredients and set aside.
  • Mix the shortening with the brown sugar.
  • Add the egg and mix.
  • Add the dry ingredients to the liquid mixture.
  • Roll into 2 (1 1/2-inch) logs. Wrap in wax paper and refrigerate 2 to 3 hours or overnight. Slice thinly, 1/4 to 1/2-inch.
  • Place on a greased cookie sheet. Bake at 375° for 8 to 10 minutes.
  • Store in an airtight container. To keep the cookies from getting too crisp, place a slice of bread in the container.
