Ingredients

  • 1 lb Fresh asparagus, trimmed
  • 12 ounce Light lowfat sour cream, divided
  • 8 ounce Light cream cheese, softened
  • 1 env unflavored gelatin
  • 1 c. Low-fat ham, fully cooked, finely minced
  • 1 Tbsp. Chives, minced
  • 1/8 tsp Pepper Additional ham and asparagus, optional Assorted reduce-fat crackers

Method

  • Enjoy these.
  • Cook asparagus in a small amount of water till tender.
  • Drain, reserving 1/4 c. liquid.
  • Cold.
  • Puree asparagus till smooth.
  • Add in 1 c. lowfat sour cream and the cream cheese; blend well.
  • In a saucepan, combine gelatin and reserved liquid; heat slowly till the gelatin is dissolved.
  • Remove from the heat; stir in the asparagus mix, ham, chives and pepper.
  • Pour into a 1-qt round-bottom bowl coated with nonstick cooking spray.
  • Cover and refrigeratetill set, about 6 hrs.
  • Unmold onto a plate and spread with reserved lowfat sour cream.
  • Garnish with additional ham and asparagus if you like.
  • Serve with crackers.
