Ingredients
- 3 quart lowfat milk
- 2 lb sugar
- 1 pch salt
- 1/4 tsp baking soda
- 2 x egg yolks cinnamon stick
Method
- Combine ingredients in a saucepan and simmer till thickened.
- Stir constantly, preferabily with a wooden spoon, till you see the saucepan while stirring (4-5 hrs).
- Add in the egg yolks and let cook 2 or possibly 3 min longer.
- Remove cinnamon stick.
- Let cold.
- This recipe must be watched constantly.
- NOTE: There is also a shortcut for preparing arequipe.
- Put a can of sweetened condensed lowfat milk in a pot of boiling water.
- The water should fully cover the can that must not be opened.
- Boil it for about 5 hrs adding water constantly to compensate evaporation.
- Let it cold down for 30 minutes before opening the can and you'll get a pretty good arequipe.
