Ingredients
- 3 1/2 lb. chop meat
- 2 c. bread crumbs or crust
- 4 Tbsp. chopped parsley
- 4 Tbsp. fresh green peppers, chopped
- 2 eggs, slightly beaten
- 1 1/3 c. tomato juice
- potatoes, wedges (quantity depends on you)
Method
- Add all ingredients into bowl and hand mix.
- Put tomato juice and egg in last.
- Shape into loaf in nongreased pan.
- Add potatoes.
- If desired, put bacon strips on top (3 slices).
- Bake in 350° to 345° oven for approximately 1 hour.
- Judge by softness of potatoes around loaf.
