Ingredients

  • 1 (29 oz.) can apricots
  • 1 large can mandarin oranges
  • 2 (3 oz.) pkg. apricot gelatin
  • 2 c. hot water
  • 2 c. fruit juices
  • 1 c. miniature marshmallows
  • 1/2 c. sugar
  • 3 Tbsp. flour
  • 1 egg, beaten
  • 2 Tbsp. butter
  • 1 c. heavy cream, whipped or 1 pkg. Dream Whip
  • 1 large can pineapple (optional)
  • grated Parmesan cheese (optional)

Method

  • Drain apricots and mandarin oranges (and pineapple).
  • Reserve juices.
  • Chop apricots.
  • Dissolve gelatin in hot water; add 1 cup reserved juice with apricots, oranges and marshmallows.
  • Place in 9 x 13-inch dish.
  • Chill until firm.
  • Blend sugar, flour, egg, butter and remaining 1 cup juice.
  • Cook until thickened, stirring constantly.
  • Chill.
  • Fold in whipped cream.
  • Spread over firm gelatin.
  • Chill and serve.
  • Makes 15 servings.
