Ingredients

  • 3/4 c. dried apricots
  • 1 c. warm water
  • 3/4 c. white flour
  • 3/4 c. whole wheat flour
  • 1/2 c. wheat germ
  • 3/4 c. rolled oats
  • 2/3 c. sugar
  • 1 Tbsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. freshly ground nutmeg
  • 1 egg, beaten lightly
  • 2 Tbsp. melted shortening or oil
  • 1/2 to 3/4 c. chopped walnuts

Method

  • Soak dried apricots in warm water for 30 minutes.
  • Save water. Sift together flour, wheat germ, rolled oats, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.
  • Add egg, oil, 3/4 cup of the saved apricot water, walnuts and the coarsely chopped apricots.
  • Place batter in a greased loaf pan.
  • Bake at 350° for about 50 minutes or until done.
  • Cool for 10 minutes and remove from pan.
  • Store for 24 hours before serving.
