Ingredients

  • firm baking apples (4 lb.)
  • 2 1/4 c. all-purpose flour
  • 10 Tbsp. cold unsalted butter
  • 5 Tbsp. shortening
  • 10 Tbsp. cold water
  • 1 egg
  • 1/2 c. granulated sugar
  • 1 tsp. sugar (for crust)
  • 1/2 tsp. cinnamon

Method

  • Crust: Combine flour, 1 tablespoon of sugar and 1/2 teaspoon of salt. "Cut in" the cold butter and shortening. Chill the contents for 10 to 15 minutes. Whisk together egg and water, then sprinkle over contents 3 tablespoons at a time. Make a ball with the dough. Cut it in half. Flatten each of the halves and wrap in plastic wrap. Put in refrigerator.
