Ingredients

  • 4 c. diced apples
  • 2 c. sugar
  • 3 c. flour
  • 2 tsp. baking soda
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 2 eggs
  • 1 c. cooking oil
  • 1 tsp. vanilla
  • 1/2 c. chopped walnuts

Method

  • Mix apples and sugar together; let set for 1 hour.
  • Sift dry ingredients together.
  • Beat eggs and add oil, vanilla and apple mixture.
  • Add flour mixture and chopped nuts.
  • Bake in a large greased Bundt pan for 1 hour at 350°.
  • Best made at least 1 day in advance because flavor is much better the second day.
  • Sprinkle cool cake with confectioners sugar, if desired.
