Ingredients
- 4 c. diced apples
- 2 c. sugar
- 3 c. flour
- 2 tsp. baking soda
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 2 eggs
- 1 c. cooking oil
- 1 tsp. vanilla
- 1/2 c. chopped walnuts
Method
- Mix apples and sugar together; let set for 1 hour.
- Sift dry ingredients together.
- Beat eggs and add oil, vanilla and apple mixture.
- Add flour mixture and chopped nuts.
- Bake in a large greased Bundt pan for 1 hour at 350°.
- Best made at least 1 day in advance because flavor is much better the second day.
- Sprinkle cool cake with confectioners sugar, if desired.
