Ingredients

  • 1/2 c. firmly packed brown sugar
  • 1/4 c. butter softened
  • 1 x egg
  • 2 x egg whites
  • 1/2 c. nonfat yogurt
  • 1/2 c. unsweetened applesauce
  • 1 3/4 c. flour
  • 1/2 tsp baking pwdr
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 4 ounce nonfat cream cheese
  • 1 1/2 Tbsp. 1% low-fat lowfat milk vegetable cooking spray
  • 1 1/2 c. granny Smith apple peeled and minced
  • 1/4 c. firmly packed brown sugar

Method

  • Cream 1/2 c. brown sugar and butter at medium speed of an electric mixer till light and fluffy (about 5 min).
  • Add in egg, and beat well.
  • Add in egg whites and beat well.
  • Combine yogurt and applesauce.
  • Combine flour and next 3 ingredients; add in to creamed mix alternately with yogurt mix, beginning and ending with flour mix.
  • Mix well after each addition.
  • Reserve 1 c. batter, and set aside.
  • Combine cream cheese and lowfat milk, stirring with a wire whisk till smooth.
  • Pour remaining batter into a 9 inch square pan coated with cooking spray.
  • Spoon cream cheese mix over batter.
  • Top with 1 c. minced apple.
  • Pour 1 c. remaining batter over apple; top with remaining 1/2 c. apple.
  • Sprinkle with 1/4 c. brown sugar.
  • Bake at 350 degrees for 55 min or possibly till a wooden pick inserted in center comes out clean.
  • Cold in pan on a wire rack.
