Ingredients

  • 1/2 lb. boneless chicken or pork
  • 3 Tbsp. soy sauce
  • 6 c. homemade chicken broth
  • 1 c. shredded cabbage
  • 1/2 c. finely chopped carrots
  • 3 Tbsp. red wine vinegar or white vinegar
  • 1 Tbsp. cornstarch
  • 2 Tbsp. thinly sliced chives or green onions
  • 4 oz. mushrooms
  • 1/2 tsp. pepper
  • 1/4 c. sugar
  • 1/2 tsp. basil
  • 1 Tbsp. cold water

Method

  • Partially freeze chicken or pork.
  • Cut meat into 1 x 1/4-inch strips.
  • Sprinkle meat with 1 tablespoon of the soy sauce.
  • In large saucepan, bring chicken broth to boiling; stir in meat, the remaining soy sauce, vinegar, pepper, sugar, mushrooms, cabbage and carrots.
  • Simmer, covered, 20 minutes.
  • Add basil; simmer 3 minutes.
