Ingredients

  • 1/2 c. vegetable shortening
  • 3 c. quick-cooking oats
  • 1/2 c. unsweetened applesauce
  • 1 c. sugar
  • 2 eggs, lightly beaten
  • 2 Tbsp. flour
  • 2 tsp. baking powder
  • 2 tsp. vanilla
  • 1 tsp. cinnamon

Method

  • Preheat oven to 350°.
  • Grease and lightly flour baking sheets; set aside.
  • In a large skillet, melt shortening over medium heat. Add oats and applesauce.
  • Cook 10 minutes, stirring constantly to prevent sticking.
  • Cool to room temperature.
  • Stir in sugar, eggs, flour, vanilla, baking soda and cinnamon until well blended. With hands, shape 1 tablespoon of dough into 1 1/2-inch round. Place on baking sheets 2 inches apart.
  • Bake 15 minutes.
