- 1/2 c. vegetable shortening
- 3 c. quick-cooking oats
- 1/2 c. unsweetened applesauce
- 1 c. sugar
- 2 eggs, lightly beaten
- 2 Tbsp. flour
- 2 tsp. baking powder
- 2 tsp. vanilla
- 1 tsp. cinnamon
Method
- Preheat oven to 350°.
- Grease and lightly flour baking sheets; set aside.
- In a large skillet, melt shortening over medium heat. Add oats and applesauce.
- Cook 10 minutes, stirring constantly to prevent sticking.
- Cool to room temperature.
- Stir in sugar, eggs, flour, vanilla, baking soda and cinnamon until well blended. With hands, shape 1 tablespoon of dough into 1 1/2-inch round. Place on baking sheets 2 inches apart.
- Bake 15 minutes.
