Ingredients
- 4 pork chops or chicken cutlets
- 5 large stalks celery, chopped
- 3 c. cooked Minute rice
- olive oil, soy sauce and salt to taste
- 4 large onions, chopped
- 2 large bell peppers, chopped
- 2 eggs
Method
- Fry pork or chicken in large pot; set aside.
- Saute onions, celery and peppers.
- Add chopped (bite size pieces) meat; saute together until done.
- Make hole in bottom of pot and drop mixed eggs.
- Stir immediately until eggs are cooked.
- Add rice, soy sauce and salt; mix well.
