Ingredients
- 1 medium sized eggplant
- 2 Tbsp. vegetable oil
- 1/4 c. chopped onions
- 1 tsp. salt
- 1 Tbsp. garam masala
- 1 small tomato, chopped
- 1/4 c. fresh coriander
- 1 c. plain yoghurt
Method
- Preheat oven to 400°.
- With knife, make 5 or 6 deep slits in the eggplant and place in a shallow baking dish.
- Roast for 45 minutes.
- When eggplant is cool, peel and chop the pulp.
