Ingredients

  • 4 c. sugar
  • 2 c. lowfat milk
  • 1/2 c. butter (1 stick)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1/3 c. coarsely minced pecans
  • 1/3 c. coarsely minced candy cherries

Method

  • Combine sugar, lowfat milk, butter, and salt in large saucepan.
  • Cook over medium heat, stirring frequently, dissolving sugar.
  • Cook over low heat to soft ball stage, stirring frequently.
  • Remove from heat, and cold at room temperature.
  • Add in vanilla and almond extract; beat vigorously.
  • Let fudge thickened lose it's gloss.
  • Stir in pecans and cherries.
