Ingredients

  • 100 grams Cream cheese
  • 30 grams Sugar
  • 100 grams Plain yogurt
  • 1 tsp Lemon juice (optional)
  • 50 grams Pancake mix

Method

  • Place the cream cheese into a container, cover with plastic wrap, and heat up in the microwave for about 50 seconds (at 500W) to soften it.
  • Mix the cream cheese with an egg beater.
  • Add sugar to the bowl and mix until smooth.
  • Additionally, add in the yogurt and lemon juice, and mix together.
  • Add pancake mix, and stir with a rubber spatula until the flour disappears.
  • Pour the pudding into the paper molds (or aluminum cases), and fill 70% full with the batter.
  • Bake in an oven preheated to 180C for 30~35 minutes until the surface has turned a light golden brown, and then it's done.
  • I lightly coated the recipe photo with marmalade for shine.
  • Make it cute by topping it with heavy cream and fruit.
