Ingredients

  • 1/2 to 1 head lettuce, torn in bite-size pieces (red leaf lettuce adds more color)
  • 1 large onion or chopped green onion
  • 1 c. celery, chopped fine
  • 1 can sliced water chestnuts
  • 1 (10 oz.) pkg. frozen green peas, thawed only enough to break apart
  • 1 to 3 c. grated Mozzarella cheese
  • 1 c. or more grated carrots

Method

  • Layer ingredients in large salad bowl in the order listed. (A clear bowl allows you to see the layers.)
  • Be sure everything is very dry before starting your layers.
  • Cover the top completely with dressing.
