Ingredients

  • 2/3 c. sugar
  • 1 1/2 c. heavy cream
  • 1/4 tsp. vanilla
  • 2 tsp. Drambuie
  • 2 tsp. Scotch
  • 1 tsp. cold unsalted butter
  • 1/2 c. chopped nuts

Method

  • Heat sugar
  • and
  • teaspoons
  • cold water over moderate heat; stir
  • until dissolved, then swirl pan until golden brown caramel. Set
  • pan
  • in sink and stir in cream slowly.
  • Caramel will seize. Boil over moderate heat until thick.
  • Remove from heat and
  • pour in
  • vanilla,
  • Drambuie
  • and
  • Scotch.
  • Stir
  • in butter; let cool 5 minutes.
  • Stir in chopped nuts.
  • Serve over your favorite ice cream.
