Ingredients

  • 6 skinned and boned chicken breasts halves
  • 1/2 c. milk
  • 1/3 c. Italian seasoned bread crumbs
  • 2 Tbsp. olive oil
  • 1 c. Mozzarella cheese, grated
  • 1 (14 1/2 oz.) can Italian stewed tomatoes, chopped
  • 1 small can tomato sauce (mix with tomatoes)

Method

  • Dip chicken in milk; dredge in bread crumbs; set aside.
  • Heat olive oil in large skillet over medium heat until hot; add chicken and cook 4 minutes on each side or until golden brown.
  • Remove from skillet and place chicken in baking dish.
  • Pour sauce over chicken, top with cheese and bake at 350° until cheese begins to turn golden brown (15 minutes).
