Ingredients
- 4 or 5 zucchini squash
- 1/2 lb. sausage
- 1 medium size onion, chopped
Method
- Boil squash until tender; drain liquid.
- Chop onion and fry with sausage.
- Place a layer of squash, a layer of sausage and onion and a layer of yellow or Jack cheese until casserole dish is full.
- Beat 2 eggs well and pour over mixture.
- Bake at 400° until eggs are well done.
