Ingredients

  • 6 chicken breasts, skinned and deboned
  • 1 (16 ounce.) can tomato sauce
  • 1/2 c. minced onion
  • 1 sm. garlic clove
  • 1/2 c. Parmesan cheese
  • 3 tbsp. Italian seasoning
  • 1/2 teaspoon salt and pepper
  • 1/2 c. ricotta cheese
  • 1/2 c. cottage cheese
  • 1 (8 ounce.) pkg. Mozzarella cheese
  • 1/2 c. dill weed

Method

  • Combine tomato sauce, garlic, Parmesan cheese, 1 tsp.
  • Italian seasoning, salt, pepper, and simmer 15 min.
  • Combine ricotta, cottage, 1/2 Mozzarella, stir in remainder of Italian seasoning salt, pepper, dill weed.
  • Spread about 1/2 c. of cheese mix into center of each chicken breast.
  • Roll up jelly roll fashion and place in lightly oiled shallow pan.
  • Pour sauce mix over chicken.
  • Sprinkle with remaining Mozzarella cheese.
  • Bake at 350 degrees for 35 min.
  • NOTE: Beat chicken with meat tenderizer hammer.
