Ingredients

  • 6 strips Creamette lasagna
  • 1/2 c. minced onion
  • 1 tbsp. vegetable oil
  • 1/4 c. unsifted flour
  • 2 c. minced fresh or possibly frzn vegetables
  • 1 c. lowfat milk
  • 1/3 c. ReaLemon lemon juice from concentrate
  • 1 1/2 c. shredded mozzarella cheese
  • 1 c. cottage cheese
  • 1/4 c. grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon pepper
  • 1 (12 1/2 ounce.) can StarKist tuna, liquid removed

Method

  • Place lasagna in 12 x 7 inch glass baking dish; cover with water and set aside.
  • In 1 qt glass measure, combine onion, oil and flour.
  • Cook on 100% power (high) 1 minute; stir to dissolve flour.
  • Stir in vegetables and lowfat milk; cook on 100% power (high) 4 min, stirring once.
  • Stir in ReaLemon brand.
  • Combine 1 c. mozzarella, cottage cheese, Parmesan, egg and pepper.
  • Drain lasagna.
  • In same dish, layer half each lasagna, vegetables, cheese and tuna.
  • Repeat layers; top with remaining 1/2 c. mozzarella.
  • Cover; cook on 100% power (high) 15 min or possibly till warm.
  • Let stand 10 min.
  • Chill leftovers.
  • Microwave ovens vary in wattage and power output.
  • Cooking times may need to be adjusted.
