Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cloves
  • 1/8 tsp. ground ginger
  • 1 1/2 c. vegetable oil
  • 2 c. sugar
  • 4 eggs
  • 3 c. shredded unpeeled zucchini (about 3/4 lb.)
  • 1 1/2 c. finely chopped peanuts

Method

  • Sift dry ingredients together and set aside.
  • In mixer bowl, beat oil, sugar and eggs until light and creamy.
  • Mix in dry ingredients just until combined, then fold in zucchini.
  • Turn into 2 greased and floured 9-inch layer cake pans.
