Ingredients

  • 4 egg whites
  • 1/2 c. sugar
  • 2 c. milk
  • 1 c. water
  • 2 Tbsp. flour
  • 6 Tbsp. sugar
  • 2 beaten egg yolks
  • 1 tsp. vanilla

Method

  • Beat whites to soft peaks, adding 1/2 cup sugar gradually. Continue beating until stiff.
  • Combine milk, water and 6 tablespoons sugar in large shallow pan.
  • Bring to simmer, stirring often.
  • With 2 spoons form snowballs of meringue.
  • Add to milk mixture.
  • Poach 2 minutes.
  • Turn; poach 1 more minute.
  • Remove with slotted spoon; drain.
  • Add 1/4 cup hot milk mixture to flour; blend well.
  • Add another 1/4 cup; stir.
  • Add to yolks.
  • Stir this into remaining milk mixture.
  • Cook until thick.
  • Remove from heat; stir in vanilla.
  • Let cool.
  • Float snowballs on top of custard. Serves 6.
