Ingredients
- 3 eggs
- 1 c. cooking oil
- 1 Tbsp. vanilla
- 2 c. shredded zucchini
- 2 c. sugar
- 2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 1 Tbsp. cinnamon
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1 c. chopped nuts
Method
- Preheat oven to 400°.
- In medium mixing bowl, combine eggs, oil, vanilla and zucchini; mix well.
- Add remaining ingredients and stir until moistened.
- Use paper baking cups in muffin tin or grease muffin cups.
- Fill cups 2/3 full.
- Bake for 15 to 18 minutes.
