Ingredients

  • 3 eggs
  • 1 c. cooking oil
  • 1 Tbsp. vanilla
  • 2 c. shredded zucchini
  • 2 c. sugar
  • 2 c. all-purpose flour
  • 1 1/2 tsp. baking soda
  • 1 Tbsp. cinnamon
  • 1 tsp. salt
  • 1/4 tsp. baking powder
  • 1 c. chopped nuts

Method

  • Preheat oven to 400°.
  • In medium mixing bowl, combine eggs, oil, vanilla and zucchini; mix well.
  • Add remaining ingredients and stir until moistened.
  • Use paper baking cups in muffin tin or grease muffin cups.
  • Fill cups 2/3 full.
  • Bake for 15 to 18 minutes.
