Ingredients
- 4 c. zucchini chunks
- 1/2 medium onion, sliced
- 2 carrots, shredded
- green pepper to taste
- pimento to taste
- 1 can cream of chicken soup
- 1/2 c. sour cream or yogurt
- 1/2 pkg. Pepperidge Farm stuffing
Method
- Cook zucchini to maintain crispness and drain.
- Saute onion. Mix all ingredients together.
- Place in 9 x 13-inch casserole dish or a 2-quart casserole dish.
- Bake at 350° for 25 minutes.
- Serves 8.
