Ingredients

  • 6 cups zucchini, sliced
  • 1 cup shredded carrots
  • 1 cup dairy sour cream
  • 1 can Cream of Chicken soup
  • 1/2 cup chopped onions
  • 1 (6 ounce) package stove top stuffing mix

Method

  • Cook sliced zucchini and chopped onion in boiling water for 5 minutes. Combine soup and sour cream, stir in shredded carrots; fold in drained zucchini and onion. Mix stuffing and margarine together. Spread 1/2 of stuffing in the bottom of a 12 x 7
  • 1/2 x 2 inch pan or baking dish. Spoon vegetable mixture on top. Sprinkle remaining stuffing over vegetables. Bake at 350 degrees for 25 to 20 minutes or until heated thorough. Can be made with yellow summer squash.
