Ingredients

  • 1/4 c. chopped onion
  • 1 bag (8 oz.) Pepperidge Farm stuffing mix
  • 1/2 c. margarine
  • 3 lb. zucchini or summer squash
  • 1 can cream of mushroom soup
  • 1 c. sour cream

Method

  • Boil squash and onions for 5 minutes.
  • Drain.
  • Mix soup and sour cream together.
  • Mix soup mixture with squash.
  • Melt margarine and mix with stuffing mix.
  • In a 7 x 12 x 2-inch pan, layer 1/2 stuffing mix, then vegetable mix, top with stuffing.
  • Bake at 350° for 30 minutes.
  • Serves 6 to 8.
