Ingredients
- 1/4 c. chopped onion
- 1 bag (8 oz.) Pepperidge Farm stuffing mix
- 1/2 c. margarine
- 3 lb. zucchini or summer squash
- 1 can cream of mushroom soup
- 1 c. sour cream
Method
- Boil squash and onions for 5 minutes.
- Drain.
- Mix soup and sour cream together.
- Mix soup mixture with squash.
- Melt margarine and mix with stuffing mix.
- In a 7 x 12 x 2-inch pan, layer 1/2 stuffing mix, then vegetable mix, top with stuffing.
- Bake at 350° for 30 minutes.
- Serves 6 to 8.
