Ingredients

  • 2 c. zucchini, grated medium
  • 3 tsp. vanilla
  • 1/3 c. oil
  • 8 oz. crushed pineapple, drained
  • 3 eggs
  • 1/2 c. sugar
  • 2 Tbsp. Sweet 'N Low sugar substitute
  • 1 1/2 c. flour
  • 1 1/2 c. whole wheat flour
  • 1/2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg
  • 1 tsp. salt
  • 1 c. chopped nuts (optional)

Method

  • Beat eggs.
  • Add oil, sugar, sugar substitute, vanilla, pineapple and zucchini.
  • Sift flours, baking powder, baking soda, cinnamon, nutmeg and salt.
  • Add to egg mixture.
  • Add nuts, if desired.
  • Bake at 375° in well-greased loaf pans for 40 minutes. Cool on wire rack.
  • May be frozen.
