- 2 c. zucchini, grated medium
- 3 tsp. vanilla
- 1/3 c. oil
- 8 oz. crushed pineapple, drained
- 3 eggs
- 1/2 c. sugar
- 2 Tbsp. Sweet 'N Low sugar substitute
- 1 1/2 c. flour
- 1 1/2 c. whole wheat flour
- 1/2 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 3/4 tsp. nutmeg
- 1 tsp. salt
- 1 c. chopped nuts (optional)
Method
- Beat eggs.
- Add oil, sugar, sugar substitute, vanilla, pineapple and zucchini.
- Sift flours, baking powder, baking soda, cinnamon, nutmeg and salt.
- Add to egg mixture.
- Add nuts, if desired.
- Bake at 375° in well-greased loaf pans for 40 minutes. Cool on wire rack.
- May be frozen.
