Ingredients

  • 1 egg
  • 1 egg white
  • 1/4 c. canola oil
  • 1 c. nonfat plain yogurt
  • 1 c. honey
  • 2 small zucchini, shredded
  • 2 tsp. vanilla
  • 1 c. unbleached flour
  • 1 1/2 c. whole-wheat flour
  • 1/4 tsp. baking powder
  • 2 tsp. baking soda
  • 3 tsp. cinnamon
  • 1 c. raisins
  • 1/4 c. chopped walnuts

Method

  • Coat two 4 X 8 inch pans with non-stick spray. In a large bowl, beat eggs. Stir in oil, plain yogurt, honey, zucchini and vanilla. In another bowl, whisk the flour, baking powder, baking soda and cinnamon. Stir into egg mixture until well blended. Stir in raisins and nuts. Bake 40-45 minutes at 350°.
