Ingredients

  • 3 c. flour
  • 1 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 3/4 tsp. soda
  • 2 c. zucchini, shredded
  • 3 eggs
  • 1 c. oil
  • 1 c. pecans, chopped

Method

  • Mix together flour, sugar, cinnamon, salt, baking powder and soda.
  • Add eggs and oil; mix well.
  • Add zucchini and nuts; stir just enough to mix together.
  • Pour into a greased and floured loaf pan (8 1/2 x 4 1/2 x 3-inch).
  • Bake about 1 to 1 1/2 hours.
  • The top will split open and a tester comes out clean when done.
  • If you prefer cupcakes, make about 2 dozen.
