Ingredients
- 3 c. flour
- 1 1/2 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1 tsp. baking powder
- 3/4 tsp. soda
- 2 c. zucchini, shredded
- 3 eggs
- 1 c. oil
- 1 c. pecans, chopped
Method
- Mix together flour, sugar, cinnamon, salt, baking powder and soda.
- Add eggs and oil; mix well.
- Add zucchini and nuts; stir just enough to mix together.
- Pour into a greased and floured loaf pan (8 1/2 x 4 1/2 x 3-inch).
- Bake about 1 to 1 1/2 hours.
- The top will split open and a tester comes out clean when done.
- If you prefer cupcakes, make about 2 dozen.
