- 2 1/4 c. whole wheat pastry flour
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 1/4 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cloves
- 1/2 tsp. ground allspice
- 3/4 c. honey
- 3/4 c. unsweetened applesauce
- 4 tsp. Ener-G Egg Replacer, mixed with 8 Tbsp. water and beaten until frothy
- 3 c. mashed banana
- 3/4 c. raisins
- 3/4 c. chopped walnuts (optional; high fat)
Method
- Preheat oven to 350°.
- Mix the dry ingredients together; set aside.
- Mix the honey and applesauce together.
- Add the egg replacer mixture, banana, raisins and walnuts.
- Add the wet mixture to the dry and mix well.
- Turn into a nonstick 13 x 9-inch pan and flatten slightly with a spatula.
- Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
