Ingredients

  • 2 1/4 c. whole wheat pastry flour
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 1/4 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cloves
  • 1/2 tsp. ground allspice
  • 3/4 c. honey
  • 3/4 c. unsweetened applesauce
  • 4 tsp. Ener-G Egg Replacer, mixed with 8 Tbsp. water and beaten until frothy
  • 3 c. mashed banana
  • 3/4 c. raisins
  • 3/4 c. chopped walnuts (optional; high fat)

Method

  • Preheat oven to 350°.
  • Mix the dry ingredients together; set aside.
  • Mix the honey and applesauce together.
  • Add the egg replacer mixture, banana, raisins and walnuts.
  • Add the wet mixture to the dry and mix well.
  • Turn into a nonstick 13 x 9-inch pan and flatten slightly with a spatula.
  • Bake for 1 hour, or until a toothpick inserted in the center comes out clean.
