Ingredients

  • 1/2 c. margarine
  • 1/2 c. vegetable oil
  • 1 1/2 c. brown sugar
  • 2 eggs
  • 2 Tbsp. water
  • 1 tsp. vanilla
  • 1 tsp. nutmeg
  • 1 1/2 c. flour
  • 1 tsp. baking soda
  • 1/2 c. whole wheat flour
  • 1 c. seedless raisins
  • 1 c. shredded coconut
  • 1 1/2 c. bran cereal
  • 2 1/2 c. zucchini, grated and drained

Method

  • Mix melted margarine, oil and sugar.
  • Beat eggs and combine with water, vanilla and nutmeg.
  • Add to sugar mixture.
  • Add both flours and baking soda.
  • Stir in remaining ingredients.
  • Pour into 9 x 13-inch greased and floured pan.
  • Bake at 350° for 40 minutes.
