Ingredients

  • 2/3 c. shortening
  • 1 tsp. salt
  • 2 1/2 tsp. baking powder
  • 1 c. brown sugar
  • 1 egg, well beaten
  • 2 c. sifted flour
  • 1 tsp. vanilla
  • 1 c. rolled oats
  • 1 c. chopped nuts
  • 1 c. crushed pineapple

Method

  • Blend shortening, salt and vanilla.
  • Add sugar and cream well. Add eggs and beat well.
  • Add flour and baking powder (which have been sifted together) and blend.
  • Add oatmeal, nuts and pineapple and blend.
  • Drop on cookie sheets.
  • Bake at 350° for 15 to 18 minutes.
