Ingredients

  • 7 c. thinly sliced zucchini, unpeeled
  • 1/2 c. chopped onion
  • 1/2 c. Parmesan cheese
  • 1/2 c. oil or a little less
  • 4 eggs, slightly beaten
  • 2 Tbsp. parsley
  • 1/2 tsp. oregano
  • 3 large chopped garlic cloves
  • dash of pepper
  • 1 c. Bisquick or flour

Method

  • Mix all ingredients together.
  • Add Bisquick or flour last. Spread in greased 13 x 9-inch pan and bake until golden brown on top, about 45 to 50 minutes at 350°.
  • Cut into finger size squares. Makes about 40.
