Ingredients

  • 30 oz. can yams, drained
  • 1/4 c. brown sugar
  • 1/4 c. melted butter
  • 6 Tbsp. pineapple juice
  • 2 eggs
  • pineapple
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/2 tsp. vanilla
  • 1/4 c. pecans
  • marshmallows

Method

  • Butter casserole dish.
  • Heat oven to 350°.
  • Beat yams until smooth and add all other ingredients (except marshmallows and pineapple).
  • Blend until smooth.
  • Pour 1/2 of mixture into baking dish.
  • Layer small can of pineapple on top, slices, chunks or crushed will work.
  • Add rest of yam mixture.
  • Top with marshmallows and pecans.
  • Bake 20 to 30 minutes.
