Ingredients
- 30 oz. can yams, drained
- 1/4 c. brown sugar
- 1/4 c. melted butter
- 6 Tbsp. pineapple juice
- 2 eggs
- pineapple
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1/2 tsp. vanilla
- 1/4 c. pecans
- marshmallows
Method
- Butter casserole dish.
- Heat oven to 350°.
- Beat yams until smooth and add all other ingredients (except marshmallows and pineapple).
- Blend until smooth.
- Pour 1/2 of mixture into baking dish.
- Layer small can of pineapple on top, slices, chunks or crushed will work.
- Add rest of yam mixture.
- Top with marshmallows and pecans.
- Bake 20 to 30 minutes.
